Face it, mornings get busy! Wether you’re off to work, or like me, off to school early in the morning, many times I find myself stumbling around the kitchen wondering what to eat for breakfast.
Nothing seems all that appetizing, yet I know I should be eating something! Heck, breakfast is the most important meal of the day! So today I decided to try a little experiment in the kitchen. Easy, no bake granola bars, with protein, and fiber, and a little hint of sweetness. What I came up with, was this:
Simple, yet addicting and delicious. These bars have only five ingredients.
164 calories, 3 grams of protein, 4 grams of fiber, and only 0.9 grams of fat.

I was recently blessed with the opportunity to spend time in the country of Nicaragua for a one-of-a-kind missions trip. My team did so many amazing things while we were there and one of them was…. you guessed it. Cooking! I spent several hours in the kitchen with Nicaraguan ladies that knew their way around the place. Let me tell ya! It was an incredible experience. Not only did I learn the skills of a Nicaraguan chef, but I also had the opportunity to grow my Spanish speaking skills and develop a friendship with Carmen. Now, I get a chance to share a little bit of what I learned with you!
Carmen and I made Platanos Fritos. (Fried plantains). They are quick, easy, and deliciously crispy!
Plantains (at least 2, but you can make as many as you want! Each plantain will make about 10-12 slices)
Vegetable or canola oil
Glass with a round, flat bottom
Plate and paper towel
Begin by slicing your plantains into quarter-half inch thick slices.
Heat oil in a frying pan. Place slices in oil and fry for 3 minutes.
Remove from oil and press down with the bottom of the rounded glass. Return to the fryer for another 5 minutes. Place on a plate covered with a paper towel to cool for a few minutes before devouring eating!
