I love baking, I take up any opportunity for me to bake, and try something new. So when my mother asked me to make her an Italian Cream Cake Cupcake yesterday I could hardly refuse. Sure she just wanted one cupcake, but some how I ended up with 48 cupcakes in my house. Whoops. 🙂 I guess the good thing is you can never have too many cupcakes!
Thankfully my sisters boyfriend is a teacher and can bring any leftover baked goods to the teachers lounge at school, all the middle aged ladies will just eat it up! (no pun intended) hee hee
So here we go, these little babies are the most moist, fluffy cupcakes you will ever taste!
Supplies:
1 stick butter
2 cups sugar
2 tsp vanilla
1/2 cup olive oil
5 egg yolks
1 cup Buttermilk
2 cups flour sifted
1 tsp baking soda
5 egg whites
1/2 cup pecans chopped
1/2 cup coconut
