Cookies are one of those little joys in life. There’s nothing like biting into a soft, chewy, thick, gooey, cookie. Oh my oh my. Especially when they’re fresh out of the oven! Back in my DBB (Days Before Baking) I would buy the grandmas brand peanut butter cookies. I’d put my quarters in the machine and the 2 pack of cookies would fall into my hand. For packaged cookies? Those were dang good.
So any who, you have to know my background with peanut butter cookies. I can’t make them. I have yet to find a recipe that’s exactly what I want. Too cakey, too flat, too not what I want.
So I spent about an hour pinteresting peanut butter cookies and found a whole bunch of people claiming they had the best recipe. Then I stumbled upon this recipe. It had an unusual ingredient! Honey! And it claimed to be chewy. Just what I wanted! So I edited it a bit, and gave it a go. The result? Deliciousness! So here it is:
Ingredients:
1 cup peanut butter
1/2 cup butter
1 cup sugar
1 cup honey
1 egg
1 egg yolk
2 tsp vanilla extract
3 cup flour
1 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
